  • 1 1/2 cups (340g) unsalted butter, cold and cut into small cubes
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 cups (about 350-400g) dried apricots, roughly chopped
  • 1 1/2 cups water
  • 1/2 cup (100g) granulated sugar (adjust to taste depending on apricot sweetness)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon almond extract (optional, but highly recommended for depth of flavor)
  • Pinch of salt

Instructions

  1. Prepare the apricot filling by simmering chopped dried apricots, water, and sugar until tender. Stir in lemon juice and almond extract before blending.
  2. Preheat oven to 375°F (190°C) and prepare a 9×13 inch pan.
  3. Make the shortbread dough by mixing flour, sugar, baking powder, salt, and cold butter until crumbly. Combine with egg and vanilla.
  4. Press most of the dough into the pan, spread the cooled apricot filling on top, then crumble reserved dough over it.
  5. Bake for 30–35 minutes until golden brown. Cool completely before cutting into bars.
