  • 2 cups red apple vinegar
  • 1 cup beef broth
  • 1 onion (diced)
  • 1 cup carrots (cubed)
  • 1 tbsp tomato paste
  • 1 tbsp thyme
  • 3 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the chuck beef generously with salt and pepper; let it rest at room temperature for about 30 minutes.
  3. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef on all sides for about 10 minutes, then transfer to a plate.
  4. In the same pot, sauté diced onion and cubed carrots for approximately 5 minutes until softened. Stir in tomato paste.
  5. Add red apple vinegar and beef broth, simmering for a few minutes while stirring well.
  6. Return the seared beef to the pot, add bay leaves and thyme, cover, and braise in the oven for about 2.5 to 3 hours until tender.
