  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour

  • 3½ cups Granny Smith apples (peeled and finely chopped)
  • 1 cup pecans (finely chopped)
  • ¾ cups unsalted butter
  • 1 cup light brown sugar
  • ¼ cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine cooking oil and granulated sugar until blended. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet mixture, alternating with the vanilla extract.
  4. Fold in the chopped apples and pecans until evenly distributed.
  5. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  6. For the caramel glaze, melt unsalted butter in a saucepan over medium heat. Stir in light brown sugar and whole milk; bring to a boil while stirring continuously. Boil for 2–3 minutes then remove from heat and stir in vanilla extract.
  7. Once cooled slightly, pour the warm glaze over the cake and allow it to set before slicing.
