  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F. Prepare a square baking dish by greasing and lining it with parchment paper.
  2. In a sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Measure out ¾ cup of reduced cider and mix in diced cold butter until melted.
  3. In a bowl, whisk together eggs, both sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until combined.
  4. Slowly add the boiled cider mixture to the wet ingredients and blend well.
  5. Gently fold in flour until just mixed; avoid overmixing.
  6. Pour batter into the prepared baking dish and bake for 22–25 minutes until golden brown.
  7. Cool slightly before brushing with butter and sprinkling with cinnamon sugar.
