  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • For Topping: ¼ cup melted butter, ½ cup sugar, 1 tablespoon cinnamon

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until halved (20–30 minutes). Let cool.
  2. Preheat oven to 350°F and grease a 9×5 loaf pan.
  3. In a mixing bowl, beat together butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  4. In another bowl, combine flour, apple pie spice, baking powder, baking soda, and salt. Gradually mix in the reduced apple cider until combined.
  5. Pour batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 15 minutes before transferring to a cooling rack.
  7. Brush with melted butter and sprinkle cinnamon-sugar topping before serving.
