  • 2 tablespoons creamy almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil, melted
  • 1 cup chocolate chips (or an 8-ounce chocolate bar)
  • 2 teaspoons coconut oil, melted (for coating)

Instructions

  1. Soak the medjool dates in very hot water for about 10 minutes to soften.
  2. Drain the dates and place them in a food processor along with almond butter and melted coconut oil. Blend until smooth and creamy.
  3. Transfer the mixture to a loaf pan lined with parchment paper and smooth out the surface. Freeze for 2-3 hours until firm.
  4. Remove from the freezer, lift out the caramel slab using parchment paper, and cut into squares.
  5. Melt chocolate chips with additional coconut oil in a heat-safe bowl. Dip each caramel square into the melted chocolate until fully coated.
  6. Place on a parchment-lined plate and refrigerate for about an hour or until set.
