  • 2 cups cooked jasmine rice (cold & day-old)
  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Pour in beaten eggs and stir-fry until they start to set but remain moist.
  3. Add cold, day-old rice, breaking apart any clumps.
  4. Push everything to one side of the pan, add green onions, and mix well.
  5. Drizzle soy sauce and sesame oil around the edges. Toss to coat evenly and serve hot.
