- 2 cups cooked jasmine rice (cold & day-old)
- 1 green onion (finely chopped)
- 2.5 tbsp regular soy sauce
- 1/2 tbsp sesame oil
- 4 large eggs (beaten)
- 2 tbsp vegetable oil
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Pour in beaten eggs and stir-fry until they start to set but remain moist.
- Add cold, day-old rice, breaking apart any clumps.
- Push everything to one side of the pan, add green onions, and mix well.
- Drizzle soy sauce and sesame oil around the edges. Toss to coat evenly and serve hot.
